Earl Grey Tea Cake

  • 2 cups hot brewed earl grey tea
  • 1 cup raisins
  • 2.5 cups all purpose flour
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 3/4 tsp cinnamon
  • 1/4 tsp black pepper
  • 1/2 cup butter, room temperature

For Glaze

  • 2 tbsp hot brewed earl grey tea
  • 6 tbsp icing sugar


1.Pre Heat oven to 350 F. Grease a loaf Pan well.

2.Soak the raisins in the hot earl grey tea. Set aside.

3.In a bowl sift the flour, sugar baking powder, salt, cinnamon and black pepper together.

4.Cut the butter in the flour thoroughly. Mix well.

5.Add the tea with the raisins and mix till well combined.

6.Pour into the loaf pan and bake for 50-60 minutes or till a tester comes out clean.

7.Cool it for 10 minutes in the pan.

8.Remove from pan and place it on a wire rack. Place a plate below the wire rack.

9.Stir the 6 tbsp sugar into the hot tea and brush it over the loaf.
