- 10-12 jalapeno peppers
- about a cup shredded cheese
- a few strips of chicken
Make an opening on one side of the pepper by cutting a slice of skin off. Scoop out the veins and seeds from the inside. Stuff the pepper with cheese and wrap with a chicken strip and secure using a toothpick. Repeat…
Grill the peppers on a pre-heated grill on medium heat for about 3 minutes on one side. Turn slightly making sure that the cheese doesn’t flow out, and cook the other side for another 2-3 minutes till the chicken is cooked, and the cheese is melted. (Or you could just pop it in the oven and broil for a few minutes.)
Serve hot with some ice cold drinks.
