White Chocolate Brownie



Ingredients
  • 1-1/2 cups flour
  • 1-1/2 cups light brown sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup butter, melted
  • 2 large eggs
  • 4 tsp vanilla
  • 1 cups cashews or pecans
  • 1-1/2 cups shredded coconut
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup white chocolate chips
  • 1/2 cup pineapple tidbits, drained

Method

Preheat oven to 350 degrees. Line a 9x12 pan with parchment paper.

Mix flour, baking powder and salt; set aside.

In another bowl, beat butter and brown sugar. Add eggs and vanilla.

Fold dry ingredients into wet ingredients. Add chocolates, coconut, pineapple tidbits and nuts. Do not over mix. Pour batter into a prepared pan.

Top with extra coconut, chocolate and nuts if desired.

Bake 25-28 min until lightly golden brown on top. Be careful not to overbake or blondies will be tough.

Cool before cutting.
