Salmon With Dijon Dill Sauce

Ingredients

  • 4-6 ounce salmon fillets, skin removed
  • 1/2 teaspoon kosher salt
  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter, cold
  • 1 small shallot, finely chopped
  • 1/2 cup white wine
  • 1 tablespoon Dijon mustard
  • 2 tablespoons roughly chopped fresh dill, plus more for garnishing
  • 1/8 teaspoon black pepper
  • 1 cucumber, thinly sliced (optional)

Method

Set broiler on high.

Place the salmon on a foil-lined broiler pan and season with 1/4 teaspoon of the salt. Broil until the salmon is the same color throughout and flakes easily, 7 to 10 minutes, depending on thickness.

Meanwhile, in a medium saucepan, over medium-high heat, heat the oil and 1 tablespoon of the butter until it melts. Add the shallot and cook until softened, about 1 minute. Add the wine and cook until reduced by half, about 3 minutes. Reduce heat to low and whisk in the mustard, dill, pepper, and the remaining salt. Remove from heat.

Cut the remaining butter into pieces, add to the sauce, and whisk until incorporated. Place the salmon on individual plates, spoon the sauce over the top, and sprinkle with additional dill. Serve with the cucumber (if desired).

Malaysian Tamarind Prawn Curry

Ingredients

  • 1/4 cup packed tamarind pulp
  • 1/2 cup sugar
  • 1/4 cup rice vinegar
  • 3 tablespoons soy sauce
  • 1 teaspoon hot sauce
  • 1 tablespoon salad oil
  • 1 1/2 pounds shelled, deveined shrimp (15 to 24 per lb.), rinsed and well drained
  • 2 green onions, ends trimmed, cut into thin slivers
Method

1. In a small bowl, mix tamarind pulp and 3/4 cup boiling water. Let stand until lukewarm, 8 to 10 minutes; rub pulp with your fingers to mix well and release from seeds. Rub mixture through a strainer into a 10- to 12-inch frying pan; discard residue.

2. Add sugar, vinegar, soy sauce, and hot sauce to frying pan. Bring mixture to a boil over high heat and stir often until reduced to about 3/4 cup, about 5 minutes. Scrape the reduced sauce back into a bowl (or, if making up to 1 week ahead, into a jar or refrigerator container; cover and chill).

3. Rinse the frying pan and wipe dry. Place over high heat and add the oil; when hot, add shrimp and stir until they begin to turn pink, about 2 minutes. Pour into a bowl. Add the tamarind sauce to pan and stir until it's boiling vigorously; return shrimp to pan and stir until opaque but still moist-looking in center of thickest part (cut to test), 3 to 6 minutes longer.

4. Spoon shrimp and sauce onto plates or into a bowl. Garnish with green onions.

Salt and Pepper Squid - Cumi Goreng Lada Garam

Ingredients
  • 8 ounces calamari tubes
  • 2 tablespoons Szechwan peppercorns
  • 2 tablespoons sea salt
  • 1 cup all-purpose flour
  • 1 cup cornstarch
  • 3/4 cup peanut oil

Method

1. Slice the calamari tubes down one side and open them up to lay flat. Score the insides with a knife in a cross-hatch pattern. Set aside.

2. Heat a small skillet over high heat with no oil. Add the peppercorns, and toast for a few minutes, stirring constantly, until they start to sizzle and pop. Remove them from the pan and set aside. Add the salt to the pan and cook over high heat until it has turned a gray color. Remove from the heat.

3. Grind the salt and pepper with a mortar and pestle or spice grinder until it becomes a fine powder. Transfer to a resealable plastic bag and mix with flour and cornstarch.

4. Heat the oil in a wok or heavy skillet over high heat until very hot. Place a few pieces of squid at a time into the bag and shake to coat. Shake off excess and quickly fry them in the oil until browned, turning once. Each one should take about 30 seconds. Serve and eat immediately.

  • 2 Tbsp olive oil
  • 3 large cloves garlic, smashed open
  • 14.5 oz fire-roasted diced tomatoes
  • 1 cup stock
  • 1 lb. calamari, cut into rings
  • 2 Tbsp tomato paste
  • 1 bay leaf
  • 2 Tbsp italian seasoning
  • 1 tsp garlic powder
  • 1 tsp freshly ground coarse black pepper
  • 1 tsp salt
  • 1/2 tsp crushed red pepper flakes
  • 2 Tbsp pesto
  • 1/4 cup grated pecorino romano
  • 2 Tbsp chopped fresh parsley
  • 1/2 lb. spaghetti, cooked to al dente in salted water
Method

In a large saucepan, heat oil over medium heat. Add garlic and cook gently without browning until fragrant. Add tomatoes, stock, calamari, tomato paste and seasonings. Bring to a simmer. Simmer over medium-low heat (uncovered) for about an hour.

Finish cooking the pasta in the sauce so that it absorbs some of the flavors.Serve steaming hot with an extra flourish of chopped parsley.

Seafood Risotto

Ingredients

----------
For Broth
----------

  • 1 quart fish stock
  • 1 bottle clam juice
  • 1 1/2 cups leeks, white parts only, sliced thin
  • 3 large cloves of garlic, crushed
  • 1 Tbsp Italian seasoning
  • 1/2 tsp salt
  • 1 tsp freshly ground black pepper

  • 1 Tbsp butter1 1/2 cups arborio rice
  • 2 lbs. blue mussels, scrubbed and debearded
  • 2 Tbsp heavy cream
  • 1 Tbsp lemon juice
  • 3 Tbsp flat leaf parsley, chopped

Method

In a large saucepan, combine all broth ingredients and bring to a simmer.

Meanwhile, melt butter in another large saucepan over medium heat and toast rice in melted butter until light golden in color, stirring occasionally.

Add a couple of ladle-fulls of broth at a time, stirring occasionally, and letting the rice absorb each addition before adding more. You'll know when it's been absorbed because you can push the rice back with a spoon and no liquid will fill the place it had been. Continue until rice is almost cooked, but a little al dente. After that last addition, leaving just a bit of broth in the first saucepan, add mussels to the pan and cover. Continue stirring and cooking the risotto while the mussels steam.

Remove the steamed mussels from their shells. Add them to the finished risotto, along with the cream. Stir well, then mix in lemon juice and parsley. Serve immediately, risotto gets gummy when it sits.
