Coconut Fried Rice

  • Grated coconut-1 cup.
  • Urad dal-1 tsp.
  • Dried red chillies-a few
  • Mustard seeds
  • Cumin seeds
  • Cloves
  • Pepper Corns
  • Curry leaves -a few
  • Asafoetida-2 pinches.
  • Salt-to taste
  • Butter-1 tbsp.
  • Basmati Rice -for 4 people, cooked.


Spread the cooked rice in a wide plate so that the cooked rice grains do not stick to each other when cold. Heat butter in a deep pan untill it turns oily, add mustard seeds and wait till it crackles, then add urad dal wait till it becomes golden brown, quickly afterwards, add cloves , split red chillies, pepper corns, cumin seeds, curry leaves, asafetida, add the grated coconut in the end. Do not let it brown too much. Mix rice to the fried mixture. Serve it with a little bit of ghee on the top. You may also garnish it with lemon quarters and coriander.

It takes approximately 10 mins to make this, excluding cooking the rice. Serves 4 people.
