Cherry Clafoutis

  • 3/4 cup (3 oz.) all-purpose flour
  • 2/3 cup (4 3/4 oz.) granulated sugar
  • 3 large eggs
  • 1 1/4 cups milk
  • 1 tsp. almond or vanilla extract
  • 3 cups (about 2 lb.) pitted sweet cherries


Preheat the oven to 375. Thoroughly grease a 10-inch round pan or ovenproof skillet.

In a mixing bowl, whisk together the flour and sugar. In a separate bowl, beat the eggs until foamy.

Beat in the milk and vanilla or almond extract. Gradually whisk the egg mixture into the flour mixture, stirring to smooth out any lumps.

Place the fruit in the greased pan and pour the batter over it. Bake for 35 to 40 minutes. A cake tester or toothpick inserted in the center should come out clean.

Serve warm or at room temperature. Sprinkle with powdered sugar before serving.
